Grenada

We spent an incredible long weekend in Grenada - a beautiful island in the Caribbean. The people were warm and welcoming, the monkeys were mischievous (!), the food was delicious, the chocolate was indulgent, and the beaches showed off with rainbows! 

Japanese Inspired Salad with Carrot Ginger Dressing

New year, new recipe! I'm making this salad on repeat with this delicious carrot ginger dressing which I found on unboundwellness! 

This dressing would go well with just about anything but I added the following:

• bed of spinach (hidden)
• cucumber
• broccoli and carrot slaw
• avocado
• kimchi
• softish boiled eggs

Copper Mug Coffee

We kicked off the new year be spending the day exploring Williamsburg! We had to stop for coffee, of course, and stumbled upon Copper Mug Coffee on N 4th Street. This gorgeous space has an all-day menu serving food in addition to specialty coffees like their lavender or taro latte and the chagaciino (mushroom coffee with espresso). 

I ordered on a maple latte to warm me up before heading back home for a cozy evening with my book! This is a great spot with good vibes, plenty of indoor / outdoor seating and a must visit if you're in Williamsburg.
